It really happened like this…..We received a call in the office from a manufacturer of pastry goods. Apparently since they had been using drought affected wheat, there were problems getting the pastry to sheet properly. Could we help?

Within a few hours, we were in the plant doing enzyme trials. 2 or 3 batches later to optimise the addition rate and the problem was solved. The customer had spent weeks trying to adjust formulations and processing conditions without results. It required an enzyme costing a few cents per batch to provide the solution.
